The Referend is a New Jersey brewery dedicated exclusively to spontaneous fermentation. The Referend buys its wort from local breweries, then lets ambient microflora inoculate that wort in its mobile coolship before fermenting and refining in oak barrels. Referend's complex and balanced blends are among the best in the United States in spontaneous fermentation.
