De Cam
This one-man blendery operated by Karel Goddeau is located in Gooik, in Belgium's Pajottenland. De Cam is among the region's smallest production of lambics and gueuzes. Goddeau puts meticulous care into his blends and fruit macerations. He receives lambic from Boon, Girardin, Lindemans, which he puts in old Pilsner Urquell barrels, now well impregnated with his house yeasts. He uses local fruits as much as possible, including Schaerbeek cherries from his family's cherry trees.
